FIESTA PILIPINA
The Philippine Cuisine is a happy marriage of culinary creations from many countries. The
Filipinos are very hospitable and love to eat with friends and they love their fiestas and related
Pageantry. Their fiesta dates back to ancient Malay rites,probably as early as A.D 1300, when then the Spanish, Americans,Chinese and Japanese have all influenced the Filipino Asian tropical diet, and Philippine cuisine has subsequently emerged as rather unique international one.
The use of certain vegetables, spices and cooking methods is reminiscent of the early strong
Spanish influence, yet other foods definitely the Chinese style of cooking. Being in the tropical zone, there is a great similarity to other Southeastern Asian countries in the abundance of tropical fruits, such as bananas,mangos,papaya, coconut,pineapple and many more.
The Filipinos are not such avid tea drinkers as the Japanese and Chinese. They have their own favorite drinks made from fermented coconut juice or fermented sugar cane juice. They also enjoy coffee , rich hot chocolate and milk.
The Spanish custom of “Meriendas” is observed in the Philippines. During the morning or afternoon breaks, cakes,tarts and sweet fritters are served. Glutinous (sweet) “sticky rice” is the basis of many of the sweet delicacies. Everyday food is fairly simple. Rice ,fish and vegetables , fried or combined with meat is the standart diet. The Philippine islanders enjoy the taste of their famous “Bagoong” (fish paste) as well as “PASTIS” (clear fish liquid sauce).
Bagoong and patis appear at every Filipino meal, rather than the salt and pepper we use. The cool tangy flavor of vinegar is most characteristic in the “ADOBO” style of cooking pork, chicken and beef . The slight of the dish in adistintive combination of flavors.
SERVING AND COOKING PILIPINA MEAL
Tables have often a raise circular turntable (like the Chinese lazy susie) on which the dishes of food are placed to make it easy to present the food to everyone sitting on the table without having to pass the dishes to and fro. Flat dinner plates ,(traditionally earthen ware) spoon , knives and forks are used with bowls for soup. In outlying islandas or rural areas, the old custom of eating with the fingers still exists but it is very outmoded in the cities.
Wine is seldom served with a meal, water being the popular drink as in most Asian countries. However, the food of the Philippines is more suited to being served with wine , than the hot spicy foods of neighboring countries, coffee is preferred among Filipinos. Tea is considered the proper drink for old people.
